Kanoya
かのや 新橋店
Right outside Shimbashi Station, Kanoya serves swift bowls of noodles, pairing udon with clear Kansai-style broth, soba with robust Kanto dashi, and crisp toppings like squid tentacle tempura.
01 / ABOUT THE PLACE
Perched just outside the station ticket barriers, Kanoya is an effortless stop for noodles between journeys or during a packed day. Part of the appeal lies in how the character of the broth shifts depending on your noodle choice: udon is paired with a pale, Kansai-style broth layered with kelp and delicate fish flakes, whereas soba comes in a darker, punchier Kanto-style dashi driven by bonito.
Toppings cover considerable ground, with gesoten—chewy squid tentacle tempura—holding a dedicated following among stand-up noodle regulars. The squid fritter holds up nicely whether dipped into the light udon broth or steeped in the rich soba soup, and adding a raw egg gives the broth a velvety richness. Other options include kitsune soba with a large sheet of simmered fried tofu releasing sweet dashi, the Kanoya Udon loaded with tororo kombu and assorted trimmings, or fragrant vegetable-kakiage soba, letting diners match their bowl to their appetite.
For a heartier meal, noodle sets paired with katsudon pork cutlet rice bowls steeped in sweet-savory sauce, or thick curry nanban noodles, offer solid comfort. The ticket machine by the entrance accepts transit IC cards, keeping the sequence from ordering to collection brisk. Running from 7:30 in the morning until 23:00 at night, with stool seating along the counter, Kanoya makes an easy stop for a morning bite or a late meal on the commute home.
